INGREDIENTS
8 oz (225g) boneless chicken meat
1 medium cucumber
1 medium avocado
1 handful cherry tomatoes
1 handful lettuce
1 tablespoon olive oil
1 lime
Salt and pepper to taste
Parsley, chopped (optional)
INSTRUCTIONS
1. Grill the chicken meat until cooked. Shred or cut the grilled chicken into small pieces.
2. Cut the cucumber in half and slice lengthways into strips. Peel and dice the avocado. Cut the cherry tomatoes into halves. Chop the lettuce into bite-sized pieces.
3. Combine everything in a large bowl.
4. Drizzle with olive oil and add the juice of a whole lime. Season with salt and pepper.
5. Toss everything. Garnish with chopped parsley, if desired.
